Here in Norway, we are getting ready for an extra long weekend, with lots of celebration. From Saturday to Monday, Norway is observing the Pentecost, Monday being a national holiday, and on Tuesday, May 17th celebration of the Norwegian constitution, also known as the National Day of Norway, is observed.

This will be my 14th year to celebrate it, and I have to say, it is one of my favorite days in Norway. The joy, cheer, and national pride are so high, that even the weather in the past hasn't been able to dim it.
The day often starts with a big breakfast, friends and family gather together, early in the day, to enjoy the meal, getting a good start on the day.

It is either ready made little sandwiches, 'snitter', with lots of different choices of toppings, or buffet line, one person hosting, or all contributing. However the breakfast is gathered together, some things are often present on the table, strawberries and cream, and salmon in some form.
Since breakfast is one of my favorite meals, I love this tradition.

It also gives energy to burn for the rest of the day, as afterwards, everyone goes to downtown, especially here in Oslo, where the schools with their marching bands, march through the town with flags, on their way to greet the Royal Family, standing on the balcony, waving, and the happy and proud residents cheer around.
How can you not enjoy and admire this tradition, guaranteed to make you smile?!
So all I can say is Gratulerer Med Dagen, Norge!
