Books & Spoons Food Blog: THE FRUIT FROM MY OWN GARDEN

You might have seen this picture last week, when I told you about my urban window herb garden?! It nearly got out of hands, with the beautiful sunny days, as the greens were growing so fast. 
I have always dreamed about growing my own vegetables, but since I live in a big city center, that's not going to happen any time soon. 
But this kitchen window garden has been lovely so far, and few additions have come there too, more variety to the herbs. 

There was a great amount of cherry tomatoes, that were ripe at the same time, and I decided to make a very simple salad with them, as the basil needed some trimming as well. I cut the tomatoes, and some of the herbs, and served them on the side of the fish.

The Pollock filet I lightly breaded with Parmesan cheese, and actually baked it, to avoid extra fat. I added some pepper, and very careful amount of salt, since the Parmesan was rather salty. I used just the basic breading steps, first a dip in flour, then eggs, and finally in the Parmesan mix with little breadcrumbs, pepper and salt.
I loved the combination of the fish and the tomato salad. I am sure it was because of the salad fixings were from my own little labor of love, but they were so sweet and tasty, I savoured every bite!
