“Awesome dessert for a crowd”
INGREDIENTS:
  • 1 lb. chopped mixed nuts or walnuts and almonds or just pecans
  • 1 tsp to 1 tbsp cinnamon, to taste
  • 1/8 tsp cloves or pumpkin pie spice
  • 1 16 oz. package phyllo dough (find in grocery store freezer)
  • 1 cup butter, melted
  • 1 cup white sugar
  • 1 cup water
  • ¾ cup honey
  • 1 tsp vanilla extract
  • 1 tsp grated lemon zest or orange zest

  1. Preheat oven to 350 degrees F.
  2. Butter 9x13” baking dish (or use ½ cake sheet size disposable foil pan).
  3. Toss together spices and nuts.
  4. Unroll phyllo and cut whole stack in half to fit dish. Cover phyllo with damp cloth while preparing baklava to keep from drying out.
  5. Place 2 or more layers of phyllo on bottom of dish. Brush with butter (don’t drizzle).
  6. Sprinkle 3 tbsps of nuts on top. Repeat layers until all ingredients used, ending with about 6 sheets phyllo.
  7. With sharp knife, cut baklava through to bottom into 4 long rows, then 9 times diagonally to make 36 diamond shapes.
  8. Bake in oven 50 minutes until golden and crisp.
  9. Keep close check as ovens vary. May be ready sooner.
  10. While baking, combine sugar and water in small saucepan over medium heat. Bring to boil.
  11. Stir in honey, vanilla, and zest. Reduce heat and simmer 20 minutes.
  12. Remove baklava from oven when done and immediately spoon syrup over it.
  13. Let cool before serving.
  14. Store uncovered.

Ingredients:
  • 16 oz bottle dry roasted peanuts, lightly salted or redskin peanuts
  • 21 oz marshmallow cream or fluff (3 jars)
  • 2 ¼ cups light corn syrup
  • 2 ¼ cups sugar
  • 1 ½ tsp vanilla
  • 6 tbsp butter, melted
  • ¼ tsp salt

  1. Grease large cookie sheet or jelly roll pan with butter or shortening. Spread peanuts over greased cookie sheet.
  2. Put marshmallow cream in large mixing bowl and set aside.
  3. In large saucepan, combine corn syrup and sugar over medium high heat and stir constantly with wooden spoon until it comes to boil.
  4. Clip candy thermometer on side of pan and heat to 280 degrees F. (soft crack stage--syrup makes soft crack sound when dropped into cold water and is hard but pliable when picked up with the fingers). Do not stir during this time!
  5. Remove from heat and let stand for 2 minutes—still no stirring.
  6. Without scraping sides of pan, pour sugar mix into marshmallow cream bowl and stir with wooden spoon until smooth.
  7. Add butter, vanilla, and salt. Stir until butter is incorporated.
  8. Pour into prepared pan and spread evenly over peanuts. Let stand at room temperature until set and firm, about 3 hours. In the fridge, it will set faster.
  9. After cutting in bite-size squares, turn upside down to show peanuts. Wrap in waxed paper rolled up or keep in squares.
